Summer is almost here! And what does that mean???…. giant bowls of pasta salad of course!
When have you ever gone to a backyard BBQ and not seen at least one pasta salad? Probs never.
Well this one is same same but different. Yes, it’s a pasta salad, but it’s different because, well, there’s no recipe. If you’re a person that needs specific amounts of things, then this might not be the recipe for you. I tell you what to include (and lots of different ideas), but after that, it’s all you and your flavour intuition!
Pasta – pick your favourite, or what you have on hand, but choose a shorter pasta (penne, bow ties, rotini, etc)
Veggies – you can use anything you want, but here are some of my favourites to add: zucchini, cucumber, cherry tomatoes, peppers, asparagus, onion, snap peas, peas
Other – olives, baby corn, beans/lentils/chickpeas, sun-dried tomatoes, feta (plant-based or not)
*note – you could increase the protein of this meal by using a chickpea pasta
Dressing – the EASIEST dressing EVER! Drizzle some of the oil from the sun-dried tomatoes, white balsamic vinegar and salt. That’s it!
The amounts you use are up to you and how many people you’re serving. So I’ll leave that up to you.
Cook your pasta, drain and cool.
Chop your veggies and other ingredients, add everything to a large bowl.
Add your cooled pasta, and mix well.
Add your dressing. Taste and adjust until it’s right for you.
